Is a Leg Quarter Really a Quarter of a Chicken?
At lunch today one of the young guys who works with us (let’s just call him Meathead) pulled out some chicken leg quarters. He held one up and asked if two leg quarters make half a chicken. I told him that was kind of hard to answer. He asked why.
I think if you only count the good parts of the chicken that most people actually eat a leg quarter could possibly be a quarter of a chicken. That might still be a stretch. Now, when you throw in the parts of the chicken most people don’t eat, like the gizzard, heart, neck and goula (butt in Italian) a leg quarter does not nearly make a quarter of a chicken.
So it’s really how you look at it. I only consider the parts you can actually eat. So a leg quarter could possibly be a quarter of a chicken. Now some people eat a chicken from the “rooter to the tooter”. To them a leg quarter is probably something like 18% of the chicken.
So there you have my take on a Leg Quarter and how much of a chicken it actually is.
